Algarve Cataplana: History, Flavours and How It Is Made

Discover the Algarve cataplana, one of the region's most iconic flavours, how the utensil works, and what the most traditional ingredients are.

The cataplana is one of the great symbols of Algarve gastronomy. More than just a dish, it is also the name of the metal utensil in which fish, seafood, vegetables, and seasonings are slow-cooked, concentrating aromas and flavors.

What is a cataplana?

The cataplana consists of two rounded metal parts that close over one another. During cooking, steam is trapped inside, helping the ingredients to cook in their own juices.

Traditionally made of copper, it has become especially associated with the Algarve and its sea-based cuisine.

Why is it so closely linked to the Algarve?

Algarve gastronomy has always had a strong relationship with fresh fish, seafood, vegetables, olive oil, and aromatic herbs. The cataplana allows these ingredients to be combined in a single preparation, maintaining intense flavors and the texture of the food.

Turismo de Portugal identifies fish and seafood cataplanas among the most characteristic traditional preparations of the region.

What goes into an Algarve cataplana?

There is no single recipe. One of the most well-known versions combines fish, clams, and shrimp with onion, tomato, bell peppers, garlic, olive oil, bay leaf, white wine, and fresh herbs.

It is also possible to find cataplanas made only with seafood, fish, meat, or different combinations of local products.

How is it prepared?

The ingredients are usually arranged in layers inside the cataplana. Once closed, it cooks over moderate heat, allowing the steam to circulate and the different flavors to mingle without losing too much moisture.

It is precisely this process that makes the preparation so aromatic when the cataplana is opened at the table.

Is it a dish or a utensil?

Both. The word cataplana originally designates the container, but it has also come to identify the dishes prepared within it.

Today, ordering a cataplana in the Algarve usually means receiving a generous preparation to share, often based on fish and seafood.

A flavor deeply connected to the Algarve

From the Ria Formosa to the western coast, the cataplana has become one of the most recognized ways to taste the products of the Algarve sea.
